Butternut squash dip

This dip/ butternut hummus/ butternut ganoush is a winner! On the tapas table, served with chicken and salad, in a quesadilla, or just simply to dip some yummy bread in it.
Butternut squash is a very versatile vegetable. You can mash it, roast it, soup it, dip it, the list goes on!

Firstly, roast approxametaly 430grams of butternut pumpkin (just the meat not the peel) until it's soft and lightely caramelized. Let cool and mix with:
1 tbsp. tahini paste
2 garlic cloves
4 tpsp. olive oil
½ dl walnuts
Juice from ½-1 lemon
1-2 dl of crème fraiche
